THE FOOD
-
Aligning with Sarah Pachelli's company, Ssere, ingredient integrity is the number one priority at Hutton Health. We observe seasonality as much as possible, as well as use organic and local products whenever available.
We believe that true health begins with the fundamentals. How we cook and season our food significantly impacts our well-being and longevity. A diet rich in nutrients can be compromised by low-quality fats and salts, which can have detrimental effects on our bodies.
To promote a healthier approach to eating and cooking, we exclusively use extra virgin olive oil (heart-healthy and anti-inflammatory) and sea salt (health-supportive and mineral-rich) sourced from Sicily. Sarah’s personal relationships with the purveyors in Sicily ensure the highest quality and authenticity of these ingredients.
-
All food is free of gluten, dairy and refined sugars. There is no alcohol nor soda. There is limited caffeine (before noon) consumption.
This is not about labeling these foods as good or bad. Instead, we explore specific limitations to better understand our relationship with discomfort, so to apply those feelings with other parts of our lives where we experience discomfort.
How we handle one situation is more than likely how we handle most situations. Therefore, exploring dietary restrictions for a few days is a fertile ground for unpacking our relationships, not only with food, but with ourselves and those around us. We explore all of this through curated dietary restrictions. If you have any specific food allergies or preferences, please alert the Hutton Health team after your reservation is made so we can accommodate accordingly.
-
Light Bites: Before morning practice, enjoy small bites, such as maple-sweetened fig granola with coconut yogurt, Sarah's signature muffins, hard boiled eggs, local fruit, coffee and teas.
Family-Style Brunch: After your morning practice, dine on an elaborate brunch served family-style. Optimal digestion occurs when the sun is at its highest point in the sky, therefore this meal is the largest of your day. This will also be your last opportunity to have caffeine.
Afternoon Delights: Once you've languished in delight of a long afternoon, retreat to your room where you are served an afternoon snack plate, such as paleo pistachio orange cookies, superfood smoothies, crudité and dip.
Mindful Dinner: Following your final movement class, delight in a protein-and-vegetable-focused dinner, plated and served in three courses. This is to practice slow eating, which is paramount for gastrointestinal health. This meal, though coursed, will be light and completely sugar-free, setting the stage for the optimal rest-and-digest parasympathetic response.
All-Day Nourishment: There is always bone broth and vegan bone broth sippers for you to enjoy throughout your day.

MEET SARAH PACHELLI, PROGRAM PRODUCER FOR HUTTON HEALTH
Sarah Pachelli is a professionally-trained chef and nutritional counselor who runs Ssere, a meal delivery company that uses food as medicine, featuring dishes to culinarily support and heal clients.
Like many healing stories, Sarah's begins with illness. In 2010, after moving from LA to NYC to pivot career paths from actor to something else, she was diagnosed with psoriasis. When the Western approach to medicine led nowhere beyond steroid creams and confusion, she began exploring alternative modes of healing, namely employing an intense elimination diet. This food-based change ultimately cured her autoimmunity and inspired her to pursue a career in food. In 2011, Sarah completed the chef's training program at NYC's Natural Gourmet Institute, where food is used for healing and nutritional knowledge is as mandatory as knife skills. After a fine dining bout at Blue Hill, she realized her gift is making healthy food delicious and segued from the restaurant world into the personal cheffing sphere.
After cooking for many clients with autoimmunities (particularly women), Sarah began to understand we cannot cure chronic conditions with food alone. Instead, it's our nuanced relationship with food that determines and predetermines our overall health and wellbeing in perpetuity. This deeper quest led Sarah to The Institute of the Psychology of Eating in 2018, where she obtained a certification as a holistic nutritional counselor.
Along with owning and operating Ssere, Sarah counsels clients around the world with her personalized nutritional approach. She has a passion for helping people navigate body image issues by cultivating a lasting relationship with intuitive eating and food freedom. She believes there is great wisdom in our struggles, if we pause to listen to what our bodies are telling us.
Last but most certainly not least, Sarah is deeply in love with and endlessly inspired by Sicily, where she travels for work, for pleasure, and to recharge. She lives in Brooklyn with her husband and her mini bernedoodle named Setteveli.
